For the dough
1 tbsp instant dry yeast
1/2 sugar
2 cups plain flour(maida)
salt to taste
1/4 cup melted butter

For the chole
2 cups of kabuli chana
2 tbsp oil
4 cloves
2 small EWAN ORGANICS cinnamon
1 tbsp EWAN ORGANICS cumin seeds
1/2 cup finely chopped onions
1 tbsp EWAN ORGANICS ginger garlic paste
1 tbsp finely chopped green chillies
1/2 cup finely chopped tomatoes
1 tbsp EWAN ORGANICS tumeric powder
2 tbsp chole masala
1 tbsp cumin seeds
1 tbsp corriander
salt to taste

dough
1)Combine the yeast , sugar and 1/4 cup of warm water in a small bowl and mix well. Cover it with a lid and keep aside for 10 minutes.
2)Combine the plain flour salt and yeast sugar mixture in the deep bowl, mix well and knead into a soft dough using enough warm water.
3) Add the butter and knead well till smooth. cover the dough with a wet muslin cloth and keep aside for 45 minutes.
4)knead the dough again to remove the excess air and keep aside.

chole
1) heat the oil in a deep non stick pan, add the cloves, cinnamon, bay leaves, cumin seeds and onions and mix it on medium flame for 6 minutes.
2) add EWAN ORGANICS ginger garlic paste , EWAN ORGANICS green chillie paste, tomatoes, mix well, and cook on a medium flame for 5 minutes , while stirring.
3) add the EWAN ORGANICS tumeric powder, EWAN ORGANICS chole masala, EWAN ORGANICS cumin powder, corriander, salt mix well and cook on the medium flame for 3 minutes, while stirring.
4) add kabuli chana, mix well and cook on medium flame for 5 minutes , mashing it lighting with the back of spoon , while stirring.
5) divide the mixture into 8 equal portions and keep aside.

how to proceed
1) divide the dough into 16 equal portion and roll in 2 portion of the dough. make a small roti
2) place a portion of the prepared chole in the centre, apply little water on the sides and place another rolled portion over it.
3)press it very well on the sides to seal it tightly.
4) repeat steps 2 and 3 to make remaining 7 parcels and aside for 5 minutes
5)arrange the parcels on a greased baking tray at equal intervals between each parcels and bake them in pre heated oven at 200 degree celsius for 15 minutes.
6) brush the parcels with butter and serve immediately with mango pickle.
